    Are you supposed to whisk the egg whites with the sugar? I’ve been mixing for around 15 minutes and haven’t achieved stiff peaks yet!

    • Hi Tori! Yes the sugar is supposed to be in with the egg whites when whisking/whipping the meringue with your mixer. Couple of potential causes for problems with the meringue not whipping up are…

      -Using boxed egg whites
      -Fat residue on bowls or equipment (including bits of egg yolk in the whites)
      -Too small of a batch size (if you reduced the batch size the egg whites can have trouble whipping up in a larger bowl
      -The meringue may need more time. I recommend following the instructions for whip speed and time , but your mixer may need more!
