Whip up this easy blackberry filling in no time to fill your cakes, macarons, and more with bright berry flavor! This dessert filling features simple ingredients and can be made using frozen or fresh blackberries (bonus points if you pick them for free in a random forest).
Cook over medium heat, mashing as you go to help the berries break down. Once the mixture begins bubbling, lower the temp to medium low if needed to avoid burning, or stir more frequently.
Adjust For Sweetness Preference
Once the berries have thoroughly broken down, taste the filling to see if it needs any additional sugar. Depending on how sweet the berries are and your personal sweetness preference, you may want to add an additional tablespoon or two.
Thicken the Filling
Next, stir the cornstarch and water together in a separate small bowl to create a slurry.
Pour the slurry into the saucepan and stir to combine. Cook the filling for a few more minutes until thickened.
Cooling the Filling
Pour filling into your desired container, and allow to cool.
And that’s it! This batch makes 1.5 cups, perfect for filling a few cake layers, or 1.5-2 dozen cupcakes! I recently used a 1/2 batch of this recipe to top some Blackberry Coconut Cookies and it was DELICIOUS. Check out the recipe below!
1/2cupgranulated sugar(plus an optional additional few tbsp to taste depending on the sweetness of the berries)
1tbsplemon zestabout 1 lemon worth
1tbsplemon juiceabout 1/2 lemon
1.5tbspcornstarch
1.5tbspwater
Instructions
Place blackberries, sugar, lemon zest, and lemon juice in a small saucepan and cook over medium heat until the berries have broken down. Mash and stir with a wooden spatula as you go.
Once berries have thoroughly broken down, taste to see if additional sugar needs to be added. Add 1-2 additional tablespoons if desired.
In a small bowl, stir cornstarch and water together until completely combined.
Add cornstarch slurry to the berries while stirring, and continue to stir.
Bring mixture to a low simmer while stirring frequently. Be sure to fully scrape the bottom and sides of your pan as you go. Continue to cook until the filling has thickened.
Remove filling from heat. Place in the fridge to chill.
